I made Baked Southwestern Eggrolls.

These turned out so dang good.
Plus, the are vegetarian.
Also, they are not deep fried, but baked!
I don't think they are too unhealthy.. right?

Ingredients:
2 C Corn                              1(15 oz. can) Black Beans rinsed and drained
1(10 oz) package chopped spinach. (I just chopped up about 2 C of lettuce)
2 C Shredded Cheese                          1(4oz.) can diced green chiles.
4 green onions, chopped                     1tsp ground Cumin
1/2 tsp Chili Powder                                        1tsp Salt
1/2 tsp Pepper                                    1/4 tsp cayenne pepper
1 package egg roll wrappers

Step 1:
In a large bowl, combine everything.. except the egg roll wrappers.
Mix well so it is evenly blended.

Step 2:
Preheat oven to 425 degrees.
Wrap up your eggrolls!

Place filling diagonally on wrap.
Fold bottom corner over filling; roll snugly half-way to cover filling.

Fold in both sides snugly against filling; moisten edges of last flap.

Roll wrap up and seal top corner.
Place onto a greased cookie sheet.

Step 3:
Bake for 7 min. flip them over.
Bake about 7 more minutes.
Bake until they are golden brown.

DONE!!!
SO GOOD!
I ate them with some sour cream and salsa.
This is how happy I was eating these.
