I did a Pumpkin Cake Cook-Off

My family has a family cookbook. I have it at college.
The dilemma I came across is..
both of my aunts, who are great cooks, had different pumpkin bar/cake recipes.
I made them both and had my friends come try and rate them.
The consensus was that cake #1 was a yummier cake.
Cake #2 had better frosting. But both #1 and #2 were super delicious. 

Cake Number 1:

INGREDIENTS:
              1 C Oil                       2 C canned pumpkin
2 C flour                             2 C sugar
4 eggs- beaten               1 tsp baking soda
2 tsp baking powder                2 tsp cinnamon
            1/2 tsp salt                  1/4 tsp ground cloves
1/4 tsp ground nutmeg             1/4 tsp ground ginger

DIRECTIONS:
Heat oven to 350 degrees.
Combine ingredients and mix well. Pour into a greased jelly roll pan. 
Bake 25-30 minutes.
Frost when completely cool.. slightly chilled.

FROSTING:
6  oz. Cream cheese               3/4 stick butter
1 3/4 C powdered sugar                    1 tsp vanilla
1 Tbsp milk or cream

mix until smooth and spread on cooled pumpkin bars.


Cake Number 2:

INGREDIENTS:
4 eggs            1 1/2 C sugar
3/4 C oil             15 oz can pumpkin

mix until smooth.

          2 C flour                            2 tsp cinnamon
2 tsp baking powder                    1 tsp baking soda
                 1 tsp salt                 1 box instant vanilla pudding

Heat oven to 350 degrees.
Mix in the rest of the ingredients. 
Bake for 25-30 minutes.
Frost when completely cool... slightly chilled

FROSTING
8 oz. cream cheese                1 1/2 C powdered sugar
2 Tbsp soft butter                           1/2 tsp vanilla
combine, add milk if needed.
Spread on cooled pumpkin bars.

DONE!
It was super fun spending my day making these with Megan.
I also love eating, and spreading the joy of eating treats. :)
It definitely "wooed" the men. jk. But they enjoyed the idea.
