I made Mini Mexican Meatloaf
Ay-ay-ay! I love mexican food!
I also haven't had meatloaf in ages. Ironically- I like meat loaf.
So, when I saw this simple recipe, it was a must try.
I am in such a big cooking/crafting kick lately.
Ingredients:
1 lb Ground Beef
2 tsp Chili Powder(I used taco seasoning)
1 pkg (6 oz.) stuffing mix(I used Chicken)
1 Cup Water
3/4 cup Chunky Salsa
Mexican style Shredded Cheese
Step 1:
Preheat oven to 375
Mix Beef, Chili Powder, Stuffing Mix, and Water together
WITH YO HANDS!
Because, it is much easier this way, and it's kinda fun.
Step 2:
Grease a 12 portion muffin tin.
put your mix into each tin and press a little indentation in the middle.
Fill this indentation with salsa.
Step 3:
Bake for 30 minutes.
Top with Cheese
Bake another 5-ish minutes; until cheese is melted.
Enjoy! They are pretty filling, and I had enough to freeze for later meals! Perfect!

I made WonTon Tacos
I felt like trying something more ethnic tonight.
I also thought of Applebee's Wonton Tacos, which are super yummy.
So, I found THIS recipe on Pinterest.
It makes enough for 2(though, I ate all of them.)
INGREDIENTS
1 chicken breast, boiled and shredded
about 8 wonton wrappers
2 tbs BBQ sauce 2 tbs Sesame Ginger dressing
1 tbs chopped Cilantro leaves
2 tbs Mexican cheese
cooking spray
Avocado(optional)
Step 1
Preheat oven to 400 degrees.
In a bowl combine BBQ sauce, Dressing, Cheese and Cilantro Leaves
Step 2
Mix in Chicken
Step 3
In center of wonton wrapper, place about 1-2 tbs of chicken mixture.
Wet and Pinch two corners together.
Continue until all of the chicken is used up
Step 4
Line baking sheet with foil or parchment paper. Place wraps on baking sheet.
Spray with cooking spray.
Bake 10-12 minutes, until golden brown and crispy
Enjoy!- top with avocado to taste even better.

I Made Buffalo Chicken Taquitos
Today I made these, because I needed a change from my normal
college meal plan of salad, sandwiches, ramen, and easy mac.
They didn't take too long. About 45 min.(if your chicken is already cooked)
And it also for me made 10, so I had plenty to freeze for later.
Be Prepared for a mouth explosion!
Ingredients:
4 C shredded chicken 12 Soft Taco Tortillas
2 C grated Mozzarella Cheese 4 oz. Cream Cheese
1/3 C Hot Sauce 1/3 C Milk
2 tbs Butter 1 tsp Mrs. Dash seasoning
1 tsp Garlic Powder 2 tbs Vegetable Oil
Step 1:
Preheat oven to 425 degrees.
In a saucepan melt Butter at medium heat.
Step 2:
Add Mrs. Dash and Garlic Powder.
Stir to combine and cook for 1 minute.
Step 3:
Stir in Cream Cheese and keep mixing until it has completely
mixed in with the butter and spices.
Step 4:
Mix in Hot Sauce and Milk and let simmer 5-8 minutes.
Step 5:
Add chicken.
Step 6:
Lay out tortilla, put about 1/4 C chicken mix and 2 tbs of cheese onto the tortilla
roll it up and place on baking sheet.
Continue until you run out of filling.
Step 7:
Spread oil on all sides of the taquitos
Bake for 15-18 minutes rotating the taquitos about every 5 minutes.
When they are golden brown they're done!
ENJOY!!!!
My roommates even said they tasted way good. So they must be.

I made my Tight Collar, Looser and Cuter.
So, I hate crew neck shirts.
I feel like I am being strangled by them.
But, every awesome bear, wolf, and any other free t-shirt you get,
is crew neck. It's terrible.
SOOOOOO I discovered this awesome way
to keep it crew, and nice and loose.
It also won't fray and look all cray-cray.
What You Need:
Scissors and your T-Shirt
Step 1:
Locate seam that you will be cutting above.
Step 2:
Cut along seam with your scissors, just make sure you don't cut the seam.
Done!! And you can even wear the cut off collar as a super awesome headband
that matches the shirt you're wearing.
