I Made Caprese Lasagna Roll-Ups

I was in a cooking mood, and I haven't had italian in forever.
I took some elements from a recipe, and I did some of my own.
It was SO delicious, and I have plenty of leftovers.
(Perfect for freezing for later!)

INGREDIENTS:
8 Lasagna noodles, uncooked
2 C shredded Mozzarella Cheese-separated
3/4 C Ricotta Cheese
1 Large Egg White
1/3 C Finely Shredded Parmesan Cheese
Freshly Ground Pepper (for taste)
3-4 Roma tomatoes- thinly sliced (I'm not very good at thinly slicing)
1/4 C Basil Pesto (ish- I didn't measure)
1-2 C Simple Marinara Sauce

Step 1:
Cook your lasagna noodles according to the box, until al dente.

Step 2:
While past is cooking mix together ricotta cheese and egg white until well blended.
Stir in Parmesan Cheese. Mix in 1 1/2 C of Mozzarella Cheese.
Season with Black Pepper- no salt because cheese is salty.

Step 3:
Preheat Oven to 350 Degrees.
Lay your noodles out on a pan, wax paper, parchment paper- you decide!
Place about 1/4 C of the Cheese Mixture over each lasagna noodle and spread in an even layer.
Take 4 tomato slices and lay along noodle.
Take Basil and spread on top of the tomatoes.
It looks so Pretty!!!

Step 4:
Roll up your Lasagna Noodles Snuggly.
Take a 9x13 or 11x7 pan and spread 1/4-1/2 C Marinara Sauce along the bottom.
Place rolled up noodles in pan, seam side down.
Cover with the rest of Marinara Sauce (cover edges so they don't dry out)
Sprinkle the rest of the Mozzarella Cheese on top.
Bake for 30 minutes.

While You Wait:
Eat some Cheese!

Clean the Kitchen.
When you get done with that and get super bored.
Take some pictures of yourself!

Done:
Congratulations, you finished! If desired put some more basil on top and eat it while it's warm!
Lots of Love, Tell me if you try it out!
It tasted so fresh, and just hit the spot!
