I Made Fresh Avocado Corn Salsa

This is actually my Aunt's recipe. She's an amazing cook.
My mom then made it for my family.
I love this recipe.
So much.
It tastes good with chips, on salads, and it even tasted good on my fish!



Ingredients:
5 Garlic Cloves; minced
1/4 C olive oil
3 Tablespoons white vinegar
1/4 C lemon juice
1 teaspoon dried oregano
1/2 teaspoon pepper
1 package (16oz) frozen corn- thawed
1 can black beans
2 cans sliced black olives
1 medium sweet red pepper, chopped
1 small onion, chopped small
4 avocados, chopped into cubes.

Step 1:
In small bowl mix together well garlic, oil vinegar, lemon juice,
oregano, salt and pepper.

Step 2:
Combine corn, beans, olives, red pepper and onion.
Pour dressing over and mix well.
The Onion Hurt Me Eyes!

Step 3:
Let chill over night, right before serving add the avocados.

I just mixed everything at once, and ate it right then. 
It tastes good, but it definitely tastes better after all the flavors mix.

This is me doing a face mask. EWWW. 
but it felt awesome.

3-Day Healthy Detox Menu

So being in college, I eat really badly.
So, I took on this detox diet.
It isn't a starve yourself diet.
Take a look, try it out, tell me how it went!
It's from a real diet a nutritionist/dietitian made. 
It made me feel really good, and I'm glad I did it.
You can also expand this for 5 days.
I think I will continue to eat some of these meals and snacks too, because they're good!

Drink 64-oz. of WATER a DAY

Day 1:

BREAKFAST
1 C steel-cut/Irish oats (measured after cooking)
1 C Fresh or Frozen Berries
2 Tablespoons Chopped Walnuts

SNACK
1/2 C Plain Yogurt
2 Tablespoons GrapeNuts or other High Fiber Cereal
1/2 sliced Banana

LUNCH
Spinach
4 oz. Grilled Chicken
8-10 sliced Red Grapes
Sliced Red Onion
2 Tablespoons slivered Almonds
Top with: 2 teaspoons Olive Oil and Lemon Juice
Side: 1/2 6 in. Whole Wheat Pita Pocket

SNACK
Sliced Green Apple
1 oz. Shredded Cheddar Cheese (about 1/4 C)

DINNER
Bake 5 oz Cod or white flaky fish
topped with: 2 tsp. olive oil, fresh lemon juice, pinch of sea salt & pepper
Bake at 375 for 10-12 minutes.
serve with: 1/2 C brown rice and steamed broccoli

Day 2:

BREAKFAST
Make a 3-egg-white omelet
filled with: 2 tablespoons grated parmesan cheese and
1/2 C of sliced tomatoes and onions (or other veggie)
serve with: a navel orange or 1/2 grapefruit

SNACK
1 slice whole-grain bread
topped with 1 tablespoon all-natural peanut butter
or almond butter

LUNCH
5 oz. salmon fillet grilled or poached (or canned salmon)
Put on a bed of your favorite dark green lettuce
topped with: 1/2 C chickpeas(or garbanzo beans), fresh lemon juice, and 1 tsp olive oil

SNACK
1/2 C 1% cottage cheese
topped with 1/2 C of fresh or frozen berries

DINNER
Broil 4 oz. ground sirloin burger(or lean ground turkey burger)
serve on a whole-wheat english muffin
topped with: sauteed mushrooms and onions
serve with: mixed green salad. topped with: balsamic vinegar and 1 tsp olive oil

Day 3:

BREAKFAST
Combine 1 C plain yogurt, 2 tablespoons flax seeds,
1 C fresh/frozen Berries and 2 tablespoons Grape-Nuts or other
high-fiber breakfast cereal.

SNACK
1 hard-boiled egg and a handful of baby carrots
(I didn't get a pic sorry)

LUNCH
Top a 6 in. whole-wheat tortilla with 1/4 of a sliced avocado
2 slices of tomato
2 slices of part-skim mozzarella cheese
1 tsp Dijon mustard and
1 romaine lettuce leaf.
Wrap up and eat with: about 15-20 grapes


SNACK
1 C skim or soy milk, and 20 almonds

DINNER
Bake 5-oz. boneless/skinless chicken breast topped with:
fresh lemon juice, 2 tsp olive oil and 1 tablespoon of capers or sliced green olives.
Bake at 375 degrees for about 20 minutes.
Serve with 1 C thawed frozen corn niblets mixed with 1 diced plum tomato, 1/4 C black beans, Topped with a pinch of sea salt and pepper.



Try it out!
My favorite meal was the hamburger. For sure.
Also, as you can see, I substituted a couple of items, such as half a slice of whole grain bread instead of the pita bread. And I used spinach on everything since I didn't want to spend money on a lot of different things, but it still worked for me!

I made the Best Cookies Ever

These cookies are amazing,
and ginormous,
and soft,
and perfect.
Tastes better than a store bought cookie.

Ingredients:
2 C Flour 
1/2 tsp Baking Soda
1/2 Tsp Salt
3/4 C Butter, melted
1 C Packed Brown Sugar
1/2 C White Sugar
1 Tbs Vanilla Extract
1 Egg
1 Egg Yolk
2 C Semisweet Chocolate Chips

Step 1:
Heat oven to 325 degrees. Grease cookie Sheets
In a medium bowl mix together Flour, Baking soda and Salt

Step 2:
In a larger bowl
mix together Butter, Brown Sugar, and White Sugar until well blended.
Beat in Vanilla, Egg, and Egg Yolk until light and creamy.

Step 3:
Mix in dry ingredients until just blended.
Mix Chocolate chips in with a wooden spoon.

Step 4:
Drop cookies 1/4 C at a time onto cookie sheets about 2 inches apart.
They expand like crazy, because they are ginormous,
so make sure there is enough distance between them.

Step 5:
Bake 15-17 minutes until edges are a little golden.
Cool and Eat!

Seriously, they are amazing.

I made a Crochet Hat

This is the first hat I have ever made.
I love it a lot. 
I am not sure how to describe how to make a crochet thing.
but... here it goes!
Feel free to ask questions or comment.


what you need:
Yarn
Crochet Hook G 4.25 MM

Step 1:
Start off by making a chain as big as you want to fit around your head.


Step 2:
After this you will do a single crochet stitch for 3 rows
But, you go through both of the top loops,
and not just the one furthest away.
This creates a thicker, less stretchy part.


Step 3:
On the 4th row do a single stitch,
but do it on the loop below the loops you would
normally stick the crochet hook through.
This creates the rib, because the two top loops end up sticking out.



Step 4:
Single Crochet for 3 more rows, or however desired.

Step 5:
On row 7 alternate between a triple stitch and a single stitch.
On row 8 do a single stitch.

Repeat step 5 for about 24 rows, or your desired length.

Step 6:
When you want to bring the hat to a close on each of the 
triple stitch rows and on each triple stitch skip a loop and go to the next one.
This makes each row smaller.
Continue stitching as in step 5 but bringing it in each triple stitch.

Step 7:
Tie it off!

DONE!!
It has a fun Reggae feel to it.

I made the Perfect College Treat

While eating these Roxy and I decided these were the perfect college treat.
Cheap. Easy. Yummy.
I have never made these before, so I burn a couple.
But who wants to see a blog where everything looks perfect?
Those just make me feel bad when my stuff doesn't look so good.

Ingredients:
1 1/2 C Oil
8 Oreos
1 C Pancake mix

In all honesty, I did not measure these things, I just guesstimated how much I should put.
So be smart and just take a good guess at how much you need.

Step 1:
Mix pancake mix into a batter
Heat Oil on oven 
You know that it is hot enough when you can throw a little batter in and it
immediately comes to the surface and turns brown.

Step 2:
Cover Oreos in pancake batter
Then put them into the oil
Be careful not to splatter the oil.
Also it cooks super fast, so keep an eye on it.
Flip it after a couple seconds to cook both sides.


I burnt mine because I got the oil too hot.
Make sure your oil isn't too hot, so then it doesn't cook too fast.


Step 3:
If desired sprinkle with powdered sugar and let cool.

Done! SO good!
Even the burnt ones tasted delicious, not even lying.
